Description
Extraordinary Italian Wines utilizes a technique called ‘Appassimento’, where the grapes are partially dried for at least a couple of months, and once the wine has been pressed, it is fermented together with the grape must. This process imparts richness and complexity to the wines, using a style that is usually reserved for the famous Ripasso wines from Veneto. Intense aromas of juicy berries, freshly cooked plums, and spicy notes of cocoa, vanilla, and tobacco, complemented by fine herbs and freshly roasted coffee flavours on the palate. Full-bodied and round with soft, sweet tannins. Partially produced from overripe grapes that are processed using the appassimento method.
