2018 Chablis 1er Cru Vaillons, William Fevre

This wine’s intriguing nose combines rich candlewax with bright lemon oil. The palate is rounded and smooth, with buffered freshness on the midpalate. It is here that the sense of chalky depth comes in, conveying a stony, austere hinterland for which 2018’s generous fruit is mere window dressing. With its depth, the wine expresses the vintage beautifully. 94 points Wine Enthusiast

The 2018 Chablis Vaillons 1er Cru is laced with strong mineral and earthy tones that are such a signature. Savory herbs, menthol, licorice, citrus peel and a touch of reduction are all woven together in a Chablis of real class and nuance. This is another wine in the range that is both dense and understated, with a real sense of aromatic lift.

One of the greatest domaines in Chablis, founded by William Fevre in 1957. Its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.
